I have been experimenting with growing some vegetables in my garden this summer. In the beginning of the summer, I had planted some radish seeds and also planted potatoes in two pots in the front yard.
I was able to pick most of the radish but had left couple of plants to flower. Yesterday, i was out in the garden and noticed the flowering plants had produced radish seed pods also called mongre or sengri in north India (read here for description). I was able to harvest approximately 4 -5 cups of radish seed pods. While we all just loved eating them raw, i had the urge to make my mother in law’s recipe of roasted potatoes with radish seed pods. I was in luck. The container in which I had planted potatoes had produced flowers almost a month ago and when I went to check, i found potatoes ready.
I started with dicing one small shallot.I also diced 4 red potatoes and washed 1.5 cups of radish seed pods.
Heated 2 tbsp of olive oil on medium heat. Added 1 tsp of fenugreek seeds in hot oil and added shallots. When shallots started to brown, added 1 tbsp of coriander powder, salt, 1 tsp of turmeric powder and 1/4 tsp of red chili powder. Added diced potatoes and drained radish seed pods. Mixed everything and covered it with a lid. Stirred every couple of minutes and let the vegetables cook. When potatoes were cooked, added 1 tsp of amchoor powder and mixed and let mixture roast till done.I served it with dal and rice. I received a big thumbs up for the potatoes from my 7 year old..
